Tom Kha Gai Ingredients

1 can (14 oz.) full fat coconut milk (20%)

1/4 cup coconut cream

6 slices fresh galangal

1 stalk fresh lemongrass, cut in 1-in. pieces

5 kaffir lime leaves, stem removed and bruised

1 pound chicken thighs, cut into 1-in. chunks

1 tablespoon freshly squeezed lime juice

1 tablespoon Thai or Vietnamese fish sauce (nuoc mam or nam pla)

Fresh Thai chili peppers, thinly sliced or crushed (to taste)

1 pinch sugar (optional)


Optional toppings:

1 cup sliced oyster, crimini, button, or straw mushrooms (optional)

1/4 cup fresh cilantro leaves, chopped

1 scallion stalk, thinly sliced

Tomato, sliced into wedges

Tom Kha Gai Recipe Preparation

  1. Heat coconut milk in a saucepan and bring to a simmer. Add lemongrass and galangal and simmer for 20 minutes.
  2. Add chicken to coconut milk and simmer on low heat for 20 minutes until cooked through, adding more coconut milk along the way as necessary.
  3. Add coconut cream and simmer for 3 minutes.
  4. Add kaffir lime leaves and simmer for 2 minutes, then remove from heat.
  5. Stir in the lime juice, fish sauce, sugar, chili peppers and optional toppings.
  6. To serve, ladle the soup over a bowl of jasmine rice.
